  • crush/destem within 2 hours of picking, 6 hours on skins, basket pressed to tank

  • settled in tank for 2 days then racked to barrel

  • indigenous yeast ferment in French oak barriques, one new/two twice used

  • 15 months maturation in barrel on lees

  • partial malolactic ferment

  • cold stabilized, light bentonite fining pre-bottling 

  • harvested 20 Apr 22, pH3.26, 13.4% alcohol
